Vegetable Stir-Fry

  • 2 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large carrot, thinly sliced
  • 1 zucchini, sliced into half moons
  • 1/2 head broccoli, cut into florets
  • 1 cup snap peas
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 tbsp sesame seeds
  • 2 green onions, thinly sliced


  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add bell peppers, carrot, zucchini, broccoli, and snap peas. Stir-fry for 5-7 minutes or until vegetables are tender but still crisp.
  2. Add garlic and ginger to the pan and cook for another 1-2 minutes until fragrant.
  3. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, cornstarch, and water.
  4. Pour the sauce over the vegetables and stir to coat. Cook for another 2-3 minutes, allowing the sauce to thicken.
  5. Remove from heat and sprinkle with sesame seeds and green onions before serving.
