Roasted Salmon with Salsa Verde

This dish features beautifully roasted salmon paired with a vibrant, herbaceous salsa verde.   • 4 6-oz salmon fillets
  • 1 tbsp olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup fresh parsley leaves
  • 1 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1 small garlic clove
  • 1 tbsp capers, rinsed
  • 1/2 cup olive oil
  • 2 tbsp lemon juice, freshly squeezed


  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tbsp olive oil and season with salt and freshly ground black pepper to taste.
  3. Roast the salmon in the preheated oven for about 12-15 minutes, or until cooked through and opaque.
  4. While the salmon is roasting, prepare the salsa verde. In a food processor, combine parsley, cilantro, mint, garlic, and capers. Pulse until finely chopped.
  5. With the food processor running, slowly add the 1/2 cup olive oil and 2 tbsp lemon juice until the mixture is well combined and has a sauce-like consistency.
  6. Taste the salsa verde and adjust seasoning with additional salt or lemon juice if needed.
  7. Serve the roasted salmon with a generous amount of salsa verde spooned over the top.
