Fettuccine with Artichokes and Chicken

  • 8 oz fettuccine pasta
  • 6 tbsp olive oil
  • 2 boneless skinless chicken breasts, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • 1 clove garlic, finely chopped
  • 2 tbsp parsley, chopped
  • 8 oz marinated artichokes, drained and chopped
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 1/4 cup grated Parmesan cheese


  1. Cook fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 3 tbsp olive oil over medium-high heat. Add chicken slices, and season with salt and pepper. Cook until golden brown, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil and garlic. Sauté until fragrant, about 1 minute.
  4. Add artichokes to the skillet and cook for 2-3 minutes.
  5. Pour in the white wine and chicken stock, and bring to a boil. Reduce heat and simmer for 5 minutes.
  6. Return chicken to the skillet along with cooked fettuccine. Toss to combine and heat through.
  7. Sprinkle with parsley and Parmesan cheese before serving.
