Creamy One-Pot Pasta with Peas and Mint

  • 12 oz pasta
  • 1 cup frozen peas
  • 2 cloves garlic, finely chopped
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup vegetable stock
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh mint leaves, chopped
  • Salt and pepper, to taste
  • Zest of 1 lemon


  1. In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, heat 1 tbsp olive oil over medium heat and sauté the garlic until fragrant, about 1 minute.
  3. Add the heavy cream and vegetable stock to the pot, stirring to combine. Bring to a simmer.
  4. Stir in the cooked pasta, frozen peas, and grated Parmesan cheese, and cook until everything is heated through and well combined.
  5. Season with salt, pepper, and lemon zest. Stir in the chopped mint leaves just before serving.
  6. Divide among plates and serve immediately, garnishing with extra Parmesan cheese if desired.
