Burst Cherry Tomato Pasta

Ingredients

  • 12 oz cherry tomatoes
  • 1/4 cup olive oil
  • 3 garlic cloves, thinly sliced
  • 1 tsp crushed red pepper flakes
  • 12 oz spaghetti
  • Kosher salt, to taste
  • 1 cup basil leaves, torn
  • 1/4 cup finely grated parmesan, plus more for serving

Instructions

  1. Heat 1/4 cup olive oil in a large skillet over medium-high heat. Add cherry tomatoes and cook, stirring occasionally, until they start to burst and release their juices, about 10-12 minutes.
  2. Add 3 garlic cloves and 1 tsp crushed red pepper flakes. Stir and cook until fragrant, about 2 minutes.
  3. Meanwhile, cook 12 oz spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente. Reserve 1 cup pasta cooking liquid.
  4. Drain spaghetti and add to skillet with burst tomatoes. Toss to coat, adding reserved pasta water gradually until desired consistency is reached.
  5. Remove from heat and stir in 1 cup basil leaves and 1/4 cup parmesan.
  6. Season with kosher salt to taste, and serve with additional parmesan on top.
