This pasta dish combines the sweetness of burst cherry tomatoes with the rich flavors of garlic, basil, and parmesan. A delightful balance of fresh and pantry ingredients, it's a quick and robust meal perfect for any night of the week. Simple yet sophisticated, this recipe is an excellent way to use cherry tomatoes when they are in season, making it as practical as it is delicious.

  • 12 oz cherry tomatoes
  • 1/4 cup olive oil
  • 3 garlic cloves, thinly sliced
  • 1 tsp crushed red pepper flakes
  • 12 oz spaghetti
  • Kosher salt, to taste
  • 1 cup basil leaves, torn
  • 1/4 cup finely grated parmesan, plus more for serving

  1. Heat 1/4 cup olive oil in a large skillet over medium-high heat. Add cherry tomatoes and cook, stirring occasionally, until they start to burst and release their juices, about 10-12 minutes.
  2. Add 3 garlic cloves and 1 tsp crushed red pepper flakes. Stir and cook until fragrant, about 2 minutes.
  3. Meanwhile, cook 12 oz spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente. Reserve 1 cup pasta cooking liquid.
  4. Drain spaghetti and add to skillet with burst tomatoes. Toss to coat, adding reserved pasta water gradually until desired consistency is reached.
  5. Remove from heat and stir in 1 cup basil leaves and 1/4 cup parmesan.
  6. Season with kosher salt to taste, and serve with additional parmesan on top.
